INGREDIENTS

- 1 1/2 cups (225g)

- plain our 1 teaspoon baking powder

- 1/2 teaspoon bicarbonate of soda

- 1 tablespoon raw sugar

- 1 1/2 cups (375ml) water

- 1 tablespoon sunflower oil

- 1/2 teaspoon vanilla essence

- Mixed berries, to serve

- Maple syrup, to serve


 

Step 1 Combine the flour, baking powder, bicarbonate of soda and sugar in a large bowl. Add the water, oil and vanilla and stir to combine.


Step 2 Heat a large non-stick frying pan over medium heat. Pour three 1-tablespoonsful quantities of batter around the pan. Cook for 1-2 minutes or until bubbles rise to the surface. Turn and cook for a further 30 seconds or until lightly golden. Transfer to a plate. Repeat in 7 batches with remaining batter to make 24 pancakes.


Step 3 Divide pancakes among serving plates. Top with mixed berries and drizzle with maple syrup.
